Yes, and for a single small event it does the job. A sheet holds names, dates and call times well enough. What it cannot do is keep pace with the work: it will not message the crew, it will not warn you about a clash, and it only ever shows what someone last typed in. So a spreadsheet is a fine place to begin, and a difficult one to stay on once you are running events week after week.
A few show up in almost every team. Copies drift apart, so no one can say for certain which one is current. The sheet goes stale the second a shift changes, because people are reading whatever they were last sent. And it stays silent when you put the same person on two jobs at once. None of that is the fault of whoever keeps it. It is simply what a fixed file does once a real schedule starts changing underneath it.
A good sign is when you spend more time tidying the sheet than planning the actual work. If you are re-sending it after every change, chasing replies by text, or spotting clashes once the crew are on site, it has stopped saving you time.
